The only thing you have to do is inactivate all of your plugins first, then reactive them once you're done. If you're already on 2.7, then you possibly can update automatically, in which case it will inactive the plugins while you just follow their instructions, which are easy. If it doesn't work that way for you, then you'll have to manually do it all. When you update your blog software, all that other stuff stays right where it is.
